Nik Hill is the chef-owner of Porcine Bistro in Sydney's Paddington, a neighbourhood bistro he opened in 2021 with partners Harry Levy and Matt Fitzgerald.

In 2025, Hill was awarded the Golden Knife from Bocuse d'Or Australia and recognised as Gourmet Traveller's Chef of the Year.

Celebrating Hunter Valley produce and producers, this exclusive 40-person dinner combines two of Australia’s most celebrated chefs’ precision, passion and creativity.

Vivid Food’s inaugural Regional Dinner Series is a citywide celebration of regional produce and talent spanning some of Sydney’s finest restaurants – all to highlight the rich culinary identity and stories of NSW, with each event focusing on a specific region.

Across seven pairings and 12 events, the Series sees acclaimed regional chefs collaborate with Sydney restaurants and chefs for one-off menus that hero their home’s ingredients, winemakers, brewers and more.
