James Lowe is the chef-owner of Lyle’s in London, a Michelin-starred restaurant celebrated for its sustainable, pared-back approach to modern British cuisine. Since opening in 2014, Lyle’s has been consistently ranked in the World’s 50 Best Restaurants. Before this, James honed his craft at St. John Bread & Wine, The Fat Duck and The River Café, developing a deep respect for seasonal produce and thoughtful simplicity.

Mat Lindsay’s culinary journey began by chance when he took a job at Rockpool while studying graphic design. Training under Neil Perry and Kylie Kwong at Rockpool, Wokpool and Billy Kwong, he developed a deep understanding of produce, technique and flavour. In 2013, he opened ester in Chippendale, now a cornerstone of contemporary Australian dining. He later expanded his vision with Poly, a beloved wine bar, and A.P Bakery, continuing his legacy of thoughtful, produce-driven cooking and baking.

James, the chef-owner of Michelin-starred Lyle’s in London, has long admired Ester, once describing it as his “spirit animal restaurant.” His deep respect for Mat’s ingredient-led, wood-fired approach began years ago, leading him to invite Mat to cook at Lyle’s for his celebrated Game series. Now, the collaboration comes full circle in Sydney, where the two chefs will create a one-off menu celebrating the best NSW produce.

Known for his sustainable, pared-back philosophy, James brings a wealth of experience from his time at St. John Bread & Wine, The Fat Duck and The River Café.
