Aperitivo Hour has been at the heart of the Wine Room since the hotel reopened just over a year ago. In its simplest form, the concept is well-priced drinks and delicious plates of super value; $5 to $7 snacks from 5 to 7pm Sunday to Thursday.

For Vivid Sydney 2018, we're taking our food and wine sensibilities up a notch by adding a program of some of Australia's best DJs.

Adi Thooey and Kali are our sonic guides for the night. After working as sous-chef under Kali, Adi has been developing up her projects such as Saturday Sunset on FBi Radio, working in record stores an hosting parties with her Rimbombo crew. Now a graduate headliner, she’s formed a name opening for the likes of Hunee, Young Marco and The Black Madonna, playing Dark Mofo, Subsonic and Splendour in the Grass festivals. Adi’s been keeping windows down and stereos up for three solid years of prime-time broadcasting on FBi Radio.

While her own FM blends always satisfy, the show has also featured live cameos from Hashman Deejay, PLO Man, Funkineven, Rahaan, Byron The Aquarius, Fett Burger and Sotofett. Kali is a seasoned DJ having spent decades in the booth, her unrelenting energy and elevated taste has masterminded local institution Picnic. Approaching its 10th year, Picnic has established itself as a name that pleasure seekers and dance music enthusiasts can trust. The adaptable empire exists as an event series, touring company, venue booker, music curator and the Kali-hosted FBi FM radio show.

Showcasing worldclass acts DJ Harvey, Young Marco, Soichi Terada, DJ Sprinkles and Underground Resistance to the most appreciative audiences, Picnic always places an emphasis on the local scene, building a party from the ground up. Kali’s unwavering loyalty to Australian artists is best highlighted by the One Night Stand series. Both, Kali’s self-guided sense of responsibility has also birthed another series entitled HER. A platform for awe-inspiring established and emerging female artists to do their thing.

By focusing on cinematic soundscapes and mellow mood shifters both DJs will ensure that the dining experience is appropriately complimented with esoteric and ethereal delights.

Bringing all our senses to life during Aperitivo Hour will be celebrated Finish-born Sydney chef Pasi Petänen. This man has certainly made a name for himself after recently closing Café Paci, which was perhaps one of the most well received pop-up restaurants the city has ever seen. While Petänen hasn’t announced any concrete plans to start up another pop-up anytime soon, he is one restless chef.

Since closing Café Paci in December 2015, he's done Italian pop-ups, vegetarian dinners and soon he'll cook Chinese as a guest chef at Lee Ho Fook. Pasi’s most recent challenges saw him monochrome, creating not just dishes, but entire menus of a single colour as part of his latest pop-up with former Café Paci collaborators Zoltan Magyar and Dennis Roman. We know how lucky we are to have Petänen’s expertise on display for the night.
